Having already incorporated turkey as a staple in my diet, I need not ween myself off the red meat. I've made tacos and enchiladas lighter and fitter for the past few months using ground turkey instead of ground beef and I actually find it tastier! Though now I make mexican less often because of the high amounts of carbs and calories, the occaisional leaner versions of Mexican food find its way into my tummy every week or few.
Last night Ace and I found recipes on Calorie Count. (I am falling more and more in love with this site by the minute)
Not only did it allow us to plan ahead, but it was delicious and easy to make!
I made:
Claire's Chicken Mexicana (184 Calories)
16 ounces chicken breast, fresh, boneless, skinless
8 ounces salsa
8 ounces corn
2 tablespoons pepper, jalapeno, minced
Directions
1.Put the salsa, peppers, and corn in a non stick skillet
2.Bring to a boil
3.Place the chicken breasts on top, spooning a little salsa over
4.Reduce the heat to a slow simmer
5.Cover and cook for 15 minutes or until the chicken is done.
6.Be careful not to scorch the bottom. Add water if needed during cooking.

Mexican Snack Pizzas (68 Calories [but I had two which = 136)
1/4 c. tomato puree
1/4 c. kidney beans (canned), drained and chopped
1 tbsp. onion, chopped
1 tbsp. green pepper, chopped
1/2 tsp. oregano leaves
1/4 c. Mozzarella cheese (part skim milk), shredded
1/4 c. lettuce, shredded
Directions
1.Split muffins; toast lightly.
2.Mix puree, beans, onion, green pepper, and oregano. Spread on muffin halves.
3.Sprinkle with cheese. Broil until cheese is bubbly, about 2 minutes.
4.Garnish with shredded lettuce.
So a grand total of 320 calories for dinner!
